Eggs Galore!!



It is that time of year again! Time to dye eggs with your kiddos and then....try to figure out what do with all of the left-over boiled eggs that you have. If you are anything like me, you probably get super excited to bust out the Mayonnaise to make a ton of deviled eggs. Unfortunately, I usually don't make them to enjoy just a few bites. I will eat deviled eggs until I'm sick! Not great for the waistline!! Here are a few recipes that I've found to help me plan healthy egg snacks.

Clean Egg Salad Sandwiches



Ingredients

• ¼ cup / 60 ml fat-free cottage cheese
• 1 Tbsp / 15 ml skim milk
• 1 tsp / 5 ml mustard
• 4 hard boiled egg whites, diced
• 1 hard boiled yolk
• 2 Tbsp / 30 ml chopped green onion
• 2 Tbsp / 30 ml chopped celery
• Dash curry powder
• ¼ tsp / 1 ml sea salt
Preparation
  1. Whip cottage cheese and milk until smooth in medium-sized mixing bowl.
  2. Blend remaining ingredients except egg whites with cottage cheese mixture.
  3. Add diced egg whites to cottage cheese mixture. Mix well.


Clean Deviled Eggs



Ingredients
  • Hard boiled egg white halves
  • 1 hard boiled egg yolk
  • Fat free cottage cheese or Greek yogurt
  • Dijon mustard
  • spike seasoning

Instructions

Mix cottage cheese, Dijon mustard and a little spike seasoning together. Amounts are up to you depending on how spicy you want it. Fill egg white halves with mixtures and sprinkle with some paprika.
You can also use this recipe to make egg salad. If you don't like cottage cheese try whipping it with an electronic mixer and add a splash of milk or use Greek yogurt!
